Peristyle Becomes Wolfe's

It's been almost three weeks since Chef Tom Wolfe closed the doors to Peristyle and now he is ready to re-open under a new name. Wolfe's will celebrate its grand opening to the public Sept. 11, 2008.

"I decided on the name Wolfe's, because I wanted to incorporate all of Tom Wolfe. When you come in you will see influence from everywhere I have been in my career," says Wolfe. "You will see a little bit of Wolfe's in the Warehouse, Peristyle and my restaurant lost in Katrina, Wolfe's of New
Orleans. I want my guests to get a true sense of me and my style."

The menu is described as "food with no boundaries" and looking at the menu it is easy to notice why. Wolfe has integrated many different flavors, cultural influences and techniques to bring out the most in each dish. "I wanted to incorporate the melting pot of New Orleans." Wolfe continues,
"There are so many different influences on food: French, Asian, and South American. I wanted to cook the food using traditional preparations and local ingredients"

The restaurant may feature a new menu, new décor, new name, more polished service and a few new drinks, but some things will be familiar to the many guests that frequented Peristyle. "I wanted pay homage to Peristyle, so I left the bar virtually untouched and you can still get a few Peristyle
classics on the menu," Wolfe says.

The menu shows Wolfe's flexibility in the kitchen with ranges from: tamarind glazed pork and parsnip hash with crispy Poblano chile rings, cilantro-jicama salad and sweet corn salsa; to squab galantine with house-cured duck sausage, topped with thyme-studded foie gras tourchon,
served with wild rice pilaf, grilled asparagus and Calvados demi glace. There will also be a special menu featuring small plates. "I love to cook. For me, food is fun and exciting and I think my new menu reflects that," Wolfe says.

Wolfe's will be open for dinner Tuesday through Saturday beginning at 6 pm and Friday for lunch 11:30-1:30.

The New Orleans Fair Grounds will be hosting Tastings at the Track, which will kick off on Thursday, September 18th and will be held on the fourth level of the Fair Grounds Clubhouse.
